Learnt all about it in the late 60's. In Canberra, we had a dirt track racecourse called Mt Ginn. Entrants could get a permit to drive their cars up the hwy to the event. Anyway, Some friends got together and built up an FC and like everyone else we made a single header pipe for each cylinder and ran it through the bonnet. Can't remember who did the welding but the pipes kept breaking at the welds and we fitted a cone of shame to the pipes to basically help support them. Well, not only did it sound great, but there was a noticeable increase in go from the old Grey. Sold me on headers since then. As an aside, our car was banned because the headers now really bulky were obstructing the drivers view.

saw another vid that shows the difference in ceramic coated and non coated. The temp difference was pretty impressive; something like 700degF in fact.

Yes it makes a huge difference to the temperature.
The interesting point is that holding onto the temperature into the headers does keep the engine bay temperature down which is good though the hotter gasses require a larger exhaust collector diameter as well as the following system. As the gasses cool the volume contracts and therefore so does the CFM requirement of the exhaust pipe. It can make the difference between needing a 2.5" system and a 3" system as well as the required muffler flow rating.
